Apple Cinnamon Sugar Banana Bread

Presenting my Cinnamon Apple Sugar Banana Bread which is my 4th banana bread variation during the COVID-19 Quarantine, and it is definitely one of my favorites! Cinnamon, Apple, and Sugar are flavors that never disappoint and always pair perfectly together. The addition of banana makes this loaf cake light and sweet but not overly sugary.

This banana bread is made up of only 10 simple ingredients that you probably already have in your house. It is refined sugar-free and naturally sweetened with apple and bananas, and a little bit of honey and coconut sugar. I choose to use granny smith apple to give a slight tart flavor (and also because that was the only apples I had in the fridge), but you can use any type of apple you want. I took the added step to peel, dice, and sauté the apples in coconut oil, honey, and cinnamon, to soften and caramelize the apple before baking. This recipe also calls for nut butter, I happened to have a jar of Legendary Food’s Apple Pie Flavored Almond and Cashew butter, which worked perfectly for this recipe because it amped up the apple flavor! This step is defiantly optional but recommended if you can get your hands on a jar of nut butter from this brand, all of their products are sugar-free and sweetened with stevia and have a range of amazing flavors with a clean ingredient list. Or you can use any nut butter you have on hand! I use almond flour making this recipe grain-free. It is also dairy-free and paleo and coming in at only 194 calories per slice!

This Apple Cinnamon Sugar Banana Bread is a prefect light, sweet breakfast. I like to have it warmed up with some almond butter or vegan butter and with a cup of coffee or tea. Or it makes a good afternoon snack when you have a sweet tooth. This recipe makes 9 thick, hearty slices and stays fresh in the fridge for about a week. You can also slice and store the pieces in the freezer for up to 4 months. Just take the slices out and let them defrost on the kitchen counter for 20/30 minutes before warming it in the microwave or oven.

ingredients:

WET:

-1 egg
-1/3 cup Legendary Foods Apple Pie Flavored Almond and Cashew Butter (OR any other sugar-free nut butter of choice)
-3 overripe, spotty bananas
-1/2 tsp vanilla
-2 tbsp honey

DRY:

-1 cup almond flour
-1 tsp baking soda
-1/2 tsp cinnamon
-pinch of salt

ADDITIONAL:

-1 medium granny smith apple; peeled and diced
-1 tsp raw honey
-1/2 tsp cinnamon
-Coconut Oil cooking spray

TOPPING:

-1/2 tsp cinnamon
-1 tbsp coconut sugar

instructions:

1. Preheat oven to 350 degrees. Spray a loaf pan with coconut oil cooking spray and line with parchment paper.

2. Spray a skillet with coconut oil spray and add add in honey and diced apples and sprinkle with cinnamon. Saute over medium heat until apples are soft and the honey is caramelized. Remove from heat and set aside.

3. In a large mixing bowl, add in all the ‘WET’ ingredients and mix until well combined.

4. In a separate bowl mix together all the ‘DRY’ ingredients.

5. Add the ‘DRY’ ingredients to the ‘WET’ ingredients and stir until well combined. Gently fold in the apples.

6. Transfer batter to prepared loaf tin.

7. Bake for 55 minutes.

8. While loaf is in the oven, combine the cinnamon and coconut sugar for topping.

9. After 55 minutes, remove loaf from oven and sprinkle cinnamon sugar over the top. Return to oven for an additional 5 minutes.

10. Remove from oven and let cool completely before slicing into 9 pieces.
